This gluten free pancake mix reminds me of Bisquik. I love the pancakes made from the mix. I've also made the quick bread recipe from the package. It was very good also. I improvised and added cranberries to mine. I find Pamela's mixes easy to use and cheaper than buying all the alternative flours to make my own gluten free flour mixes.

I bought these for my grad-student daughter who has celiac sprue. She could take these individual portions with her traveling on trips to make her own breakfast--she says are very good. I wish this product was organic but she has tried many brands of those without being very impressed. She will buy the larger size for home use and save the individual portioned ones for traveling.

Oh, yum!! These are the BEST pancakes I have had!! I wish all Gluten-free food could be this good! The single serve package is just right for me with my diabetes and it does not spike my 'sugar' for the yo-yo effect! This package makes 2 6 inch FLUFFY pancakes! Makes super moist banana bread, delicious crepes and pumpkin bread too. My friends and family will only eat these breads now and ask me to make it all the time. Good mix for waffles too.

I have made biscuits, pot pie and pancakes and they are all good. Even my daughter who does not have a problem with gluten loves it and thinks it's better than regular biscuit mix and she is only 5. I will buy this product all the time :)
